Vegan - To Be or Not To Be
This video absolutely touched my heart!
It is amazing the intelligence and innocence of little children.
I have had quite the journey with what to eat and not to eat and it has been a tedious event of trial and error. By the time I had completed my first yoga teacher training in May of 2012 I had been a vegetarian for almost a year. I didn't make a decision to become a vegetarian, it happened naturally as I began an intense spiritual study. I don't remember missing meat or feeling deprived of any food products but I can tell you there have been months of wondering what to eat and if I was receiving the right amount of the right nutrients for optimal health.
Throughout the process of trying to figure out what to feed myself I have been writing a recipe book. My intention with the recipes is to provide fun, fairly easy, and fabulous tasting food to anyone who is also trying to figure out what to eat and how much to eat. As Julia Child said, " People who love to eat, are the Best People!"
I definitely love to eat but more than that I love having people over and sharing a home cooked meal with them. The idea of being able to provide health sustaining food to my friends and family that is beautiful and delicious is very important to me.
I have enlisted the help of a few dietitians, personal trainers, and food coaches to combine some great ways to try out a Vegan Diet. The recipe book should be complete in Spring of 2014 and I plan to share a few tidbits in the meantime.
